Short answer
A hotel is a public-access building: above 1,100 litres of waste per week, it must offer guests sorting of at least two streams, packaging and paper on one side, biowaste on the other. Behind the scenes, it sorts at source like any business (paper, metals, plastics, glass, wood, textiles and biowaste), with large volumes of glass, biowaste from catering and textiles from the laundry.
